Gin is a category of spirits distilled primarily from grain (wheat or barley) and flavored with botanicals. Its primary flavoring comes from the berries that grow on the branches of juniper trees. Juniper gives gin its distinctly pine-like flavor that is often accompanied by notes of citrus and spices. Most gins are dry but older styles are sweeter. Many newer styles have a less prominent juniper component and emphasize other flavors such as citrus or cucumber.
