Peychaud’s bitters

Originating from around 1830, Peychaud’s are a bitters based on the gentian flower and have a distinctly unique flavor redolent of anise, saffron, citrus zest and mint. They are lighter than many other aromatic bitters with a more vibrant, less bitter taste. Their popularity originated in early 19th century New Orleans and were touted as having medicinal properties. Its bright red color can be used to good effect as a coloring agent within cocktails and is particularly effective in that regard as a float.
