Allspice dram

Allspice dram is also called “pimento dram” because the flavor comes from the berries of the Pimenta dioica tree. Allspice gets its name because it has the flavors of multiple spices combined; cinnamon, clove and nutmeg. These elements are associated both with the taste of winter holiday baking spices as much as they are with exotic tropical island flavors. In cocktails, a little bit goes a long way and can quickly dominate a cocktail. Tiki legend Trader Vic often used them in his cocktails a few drops at a time. There are many recipes for making allspice dram at home readily available but we stick with the commercially available offerings with the one by St. Elizabeth being a favorite.
