Cynar
An Italian bitter aperitif comprised of 13 separate herbs and plants that have been steeped into a neutral spirit, Cynar’s identifying ingredient is artichoke (Cynara scolymus) which inspires its name. It’s less complex than many amari and a bit sweeter with a much brighter flavor than its inky dark reddish brown color would indicate. The flavor is bittersweet vegetal and herbal with notes of coffee, toffee and cinnamon. As far as substitutions, some use a 4:1 ratio of Averna to Campari while others suggest Amaro Sfumato Rabarbaro.
