Use fresh-squeezed juice whenever possible. Some people prefer to let their freshly-squeezed juice rest for a few hours before using but know that citrus juice oxidizes over time and its flavor drastically changes for the worse as it gets older. Do not over-squeeze the fruit trying to get every drop as this will release bitter elements from the pith and express too much of the citrus oil.
