Known for being light-bodied, rums from Puerto Rico are heavily regulated. They are what have been termed as Spanish in style and must be distilled from molasses and aged in country in white oak barrels for a minimum of one year. They’re column-distilled and are relatively dry in character. Rums from the US Virgin Islands or unsweetened expressions from Nicaragua or the Dominican Republic make suitable substitutes.
