Using fresh-squeezed juice is ideal. It’s often difficult to balance orange juice in a cocktail because its flavor and sweetness varies wildly due to the variety of fruit and even from orange to orange. We have found Valencia and Cara Cara oranges to be our favorites. Care must be taken to taste the juice before adding it to your drink since some tweaking of the cocktail spec may be necessary to adjust for sweetness. Do not over-squeeze the fruit trying to get every drop as this will release bitter elements from the pith and express too much of the citrus oil.
