Campari
Campari is famous for its bitterness. In fact, it’s the king of the bitter red aperitifs. It’s made from herbs and fruit and has notes of oranges, sweet cherries, grapefruit and vanilla with a subtle cassia and clove spice backbone. Despite its bitterness, it has quite a bit of sweetness. Gran Classico is often used as a substitute and is likely the closest approximation, but other bitter red liqueurs can be used with varying degrees of success; Luxardo Red Bitter, Aperitivo Select, Bitter Nardini , Galliano L’Aperitivo and Aperol for example.
