Absinthe is an anise-flavored spirit and is usually bottled at a high ABV. It’s derived from plants including the flowers and leaves of Artemisia absinthium, together with green anise, sweet fennel, and other medicinal and culinary herbs. Absinthe was unavailable in the United States for quite a long time and Pernod was marketed as its alternative. It still serves as a common substitute as is Herbsaint, Anisette and Pastis.
