Maraschino liqueur
A clear liqueur distilled from Marasca cherries, both the sour flesh of the fruit and the almost almond-flavored pits are used in the process. Maraschino liqueur has a somewhat drying effect on cocktails because in spite of it having a good amount of sugar it also has bitter elements. Small amounts can transform a cocktail tremendously. Do not confuse Maraschino liqueur with other cherry-flavored liquors such as Cherry Heering as they are quite different. Perhaps the best sub would be Kirsch, a clear cherry brandy that shares some of the same qualities.
