Applejack Rabbit

Originally appearing in the 1927 book, Here’s How: Mixed Drinks, the spec needed some work. Jim Meehan of New York’s PDT bar increased the lemon juice a bit for balance. I decided to sub blood orange juice and love the results. It’s important to use straight apple brandy here, not the type that has an added neutral spirit mixed in. The apple notes play incredibly well with the maple syrup and the citrus opens up the whole thing.

Instructions

Shake all ingredients with ice and strain into a chilled coupe.
