Tradewinds

Uncovered by Beachbum Berry, this classic traces to its roots to Jamaica and the 1970s. The apricot liqueur and citrus brings in a whole other dimension compared to most creamy tropical drinks. There are many modern takes available for this classic, but for my money, this adaptation by Martin Cate of Smuggler’s Cove, San Francisco, is the one to beat. Make a delicious variation by subbing London dry gin for the rums.

Instructions

Add everything to tin. Flash blend or shake with crushed ice. Pour into a footed pilsner glass and top with more ice. Garnish with lemon wedge speared on an umbrella turned inside out as if the wind has blown it open.
