Port Au Prince
One night I set out to make the 1930s Don the Beachcomber Port Au Prince cocktail. There’s many specs for this drink and I’d usually go for the original but I wanted something different this time.
I’ve had the fantastic Smuggler’s Cove spec but this time I changed things up and made the Death & Co. version.
It uses more rum from outside Haiti than Haitian rum but is a boozier, more complex variation.
The choice made me happy and even this sly cocktail looks pleased!

Instructions
Short shake all ingredients with a few ice cubes. Strain into a pilsner glass filled with crushed ice. Garnish with a pineapple and cherry flag.
