Whole Lotta Shakin’ Goin’ On
Much has been written about Elvis Presley’s love for the peanut butter and banana sandwich. He’d also add bacon when he felt the standard sandwich was just a little too healthy.
Here I decided I needed to replicate this culinary achievement in daiquiri form. I made it on a whim thinking that it was a ridiculous idea but it turned out to be pretty delicious.
The peanut butter and banana flavor combo with the molasses found in the demerara sugar is a hard combo to beat. This one isn’t as over the top as one might think.

Shake all ingredients with ice and strain into a chilled coupe. Optionally garnish with fresh banana and a square of bacon.
Fat-washed rum: Spread the peanut butter in a thin layer across the bottom of a glass baking dish. Pour your rum on top until it fills to about a half an inch. Seal dish with plastic wrap and let it rest overnight at room temperature. Pour off the liquid, being careful to leave the peanut butter behind on the bottom of the dish. Strain the rum through cheesecloth into a bottle and discard the peanut butter.
