Hawaii Kai Treasure

The original spec for this drink from the 1960s was super unbalanced for my palate. Calling for two full ounces of lime juice and not much else to counter it, this was one-dimensional. As designed it was incredibly tart and lacking really any other flavor component. I had to modify the recipe to make this drinkable and this is where I landed. The best part here is the mouthfeeth from the cream playing off the honey and citrus. The “treasure” was a small pearl hidden in the gardenia flower garnish.

Instructions

Shake all ingredients with crushed ice until chilled and open pour into a chilled glass. Top with more crushed ice. Garnish with some gardenia petals.
