Cuba Libre Daiquiri

The rum and coke highball is a simple drink enjoyed worldwide. In the form of the Cuba Libre, it’s been elevated by the introduction of lime to the mix. This might seem like a simple addition but it changes everything. The lime opens up the whole drink, taming the Coke’s sweetness and adding depth to something that is otherwise one-dimensional. Celebrating National Daiquiri Day, I decided to bring those flavors into the daiquiri template to create something both new and familiar.

Instructions

Shake all ingredients with ice and strain into a chilled coupe.

Coca Cola Reduction syrup: Add three 12-ounce bottles of Mexican Coke (made with real sugar) to a saucepan. Bring to a low boil then reduce heat and simmer on medium heat until the volume has reduced to 6 ounces. This will take about 30 minutes. Remove from heat and allow to cool to room temperature. Bottle and store resulting syrup in the refrigerator for up to three months.
