Averna Sour

There’s something very satisfying about a well-crafted sour. The foamy texture that the egg white brings to the drink is just so luscious and delicate. When made with the richness that comes from an amaro, it’s elevated to a whole new height. This template works with all kinds of amari, but Jeffrey Morgenthaler recommends a lighter amaro like Luciano, Amaro Abano or Averna. I found Amaro CioCiaro works extremely well, too.

Instructions

Dry shake without ice then shake again with a single large ice rock. Strain into a chilled coupe. Garnish with a lemon peel and cherry.
