Clarified Mai Tai
Here we have a classic Mai Tai that has had the science of milk clarification applied to it. The process produces a clear but not always colorless drink with a well-rounded flavor profile and silken mouthfeel.
The resulting cocktail is certainly identifiable as a Mai Tai but it’s also not immediately obvious. It creates a completely different experience and one that is really enjoyable because it ends up being so easy to drink.
While I prefer the traditional Mai Tai, this version is well worth making.

Instructions
Combine all the ingredients into a mixing glass along with an ounce (30 ml) of water and stir. Follow the directions for milk clarification in the Method and Technique section.
