While sherry has been used in many classic cocktails it fell out of favor for decades until the craft cocktail revolution brought it back a short while ago.
This is one of the first newly created cocktails to prominently utilize sherry.
It was named after the father of Wylie Dufresne, a leading proponent of molecular gastronomy.
To describe the flavor I’d point you to a Manhattan of course but one having the raisin flavors and nuttiness from the sherry all balanced by the lightly bitter orange flavors of the Aperol.

Instructions
Stir all ingredients in a mixing glass with ice. Strain into a chilled coupe. Garnish with an orange twist.
